How to use and store
Your icing sheet can be stored for up to six months, in its sealed bag. Do not remove until ready to use. Keep it flat and store in a cool place, away from direct sunlight. Make sure you are careful in summer months to keep it in a cool place because it may sweat in the bag and cause the inks to run or stick to the bag.
Any type of cake can be used and places on any icing. If using a dark colour, it may show through, so do a thin layer of white icing or white chocolate.
The topper can be trimmed by cutting with sharp scissors or guillotine, cut through the layer of icing and the backing sheet. Do this before freezing. It’s your own personal choice if you want straight edges but in my opinion they look better. It’s a bit more difficult to get the backing sheet away from the icing topper.
Place a baking tray in your freezer and set to power freeze or even place in the night before to make sure the tray is really cold.
With dry hands take the topper out and place on tray inside the freezer. NOW WAIT PLACE FOR APPROX 30 MINS. Whilst waiting prepare your cake. The cake needs to be slightly sticky but not wet. The best way I find is to lightly spray a fine mist of water on it and then place a paper towel on to soak any excess. DO NOT TAKE YOUR TOPPER OUT UNTIL YOU ARE FULLY READY TO APPLY.
You don’t have long to get the topper on the cake before it warms up, LESS THAN A MINUTE, so have the cake ready in position, take the tray and topper out. Peel the backing sheet from the topper, it should peel off DO NOT FORCE. Quickly position above the cake and then place on it, once on it will stick, so make sure you have it positioned correctly. If the topper has become soft, place in freezer again and start again. Pat out any bubbles or wrinkles and they will disappear and pat/blend in the edges of the cake. Do not move the cake until the icing is dry.
Keep the cake upright in an airtight container, do not place anything on top, also store in a cool place if possible.
